After Salting... Cover with foil, or leave uncovered overnight

I just salted the turkey for an overnight dry brine, per Meathead's book.  But I am wondering if I should cover with foil overnight, or leave it naked?  I suspect that naked might help the skin get crisper... Any thoughts here?

Thanks...

Your suspicions are correct.  Leave uncovered

    Good luck on your bird.

  • Thanks... the bird will be naked tonight... Would like to have Spathcocked it, but I fear that it will not fit on the LBGE afterwards, as it is about a 20#er... So, cooking it the old fashioned way, but using Simon and Garfunkel Rub...

Will also put a bag of ice over the breasts while the egg is coming up to temp..  I hope that the ice bag doesn't melt away the seasoning.

As long as its a sealed bag of ice, shouldn't be a problem, even with the bit of condensation.
