After Salting... Cover with foil, or leave uncovered overnight
I just salted the turkey for an overnight dry brine, per Meathead's book. But I am wondering if I should cover with foil overnight, or leave it naked? I suspect that naked might help the skin get crisper... Any thoughts here?
Thanks...
Thanks...

Your suspicions are correct. Leave uncovered

Thanks... the bird will be naked tonight... Would like to have Spathcocked it, but I fear that it will not fit on the LBGE afterwards, as it is about a 20#er... So, cooking it the old fashioned way, but using Simon and Garfunkel Rub...
Will also put a bag of ice over the breasts while the egg is coming up to temp.. I hope that the ice bag doesn't melt away the seasoning.Large Egg. New Orleans Area -

The greatest barrier against all wisdom, the stronghold against knowledge itself, is the single thought, in ones mind, that they already have it all figured out. -

So the same people that think humans have no effect on climate change, now are convinced they control the weather?
