Roux was 1 cup olive oil and 1 cup flour , cook on medium heat in cast iron skillet for about an hour. Pay close attention so that you don’t burn it

2 green peppers chopped
2 onions chopped
3 celery stalks chopped 
2 Cajun sausages cooked in cast iron till browned 
smoked chicken on egg then cubed
salt and pepper to taste
okra boiled to get rid of stickiness 
raw shrimp
1 teaspoon onion powder 
1 teaspoon garlic powder
3 tablespoon Tony chaceres
 and just kind of grabbed other spices and sprinkled in what seemed like it would go good 

cooked uncovered on egg at 350 for an hour putting shrimp in for last 15 minutes
