Just the 9 lb pork butt doing its thing. I took this pic at the 4.5 hr mark. To check internal temp. Looking like 4:30am i will pull to foil to finish off the cook. I foil at 175.
I made 2 bbq sauces for this too. A vinegar sauce and a thick ketchup base. Will report back in a few hours when i pull to foil.

I make a homemade rub. Salt pepper brown sugar chili powder.. I cover in mustard then put the rub on. I dont coat it in sauce I fill a pan underneath with apple juice and apple cider vinegar I am getting ready to pull it to wrap it with a towel in 15 or so minutes. I am then going to let redt wjile i run to lowes. Then it is lunch time with football on. I will cook my peach cobbler and the baked beans on the egg when i get back tooJacksonville, FL

I don't normally foil my butts as I want the bark to harden up and start cracking. I haven't done an overnighter as most of my cooks start early in the day but I have had a cook go from 8:00 AM to 2:30 AM the next morning. 18+ hours at 225 on two Boston Butts.Marshall in Beautiful Fruit Cove, FL.
