OK- maybe I should have dug deeper...but can somebody help a virgin "pork belly egger" ?
Does anybody ever make a meal out of that cook? I keep getting the impression that all pork belly cooks are used for are
appetizers and not as the meat for a meal.
I was planning for Sunday's supper being a 3.4 pound piece of pork belly. What sides go best with it or is the pork belly meat just appetizers?

Have you ever made the pork belly burnt ends Ron? If not I’d definitely recommend doing them, even if they are normally an appetizer. The reality is that you don’t need more than a handful to fill you up, and they’re so so good."I've made a note never to piss you two off." - Stike

No John, I have never even tasted a burnt end. As it now stands I will change my menu plans for Sunday.Re-gasketing America one yard at a time.

This is my favorite belly meal. We do them lettuce wrap though instead of steam buns which I am sure are fantastic -

Got a pork belly in the small fridge curing for bacon right now. Just put it in this morning .I use High mountain Buckboard Bacon cure . Smoke is done in Masterbuilt digital smoker,better temp control. This is about the fifth one I've done and it turns out great every time . Did the burnt end thing with one about three months ago ,kind of reminded me of a General Tsao pork .Had it with rice and red bell peppers ,real tasty. Been getting my pork bellies from BJ's ,about $2.99 per lb.

My brother did a sous vide pork belly. He skipped searing it at the end. It was tasty, though had a lot of unrendered fat and no crust. I wouldn't use it as a dinner main course. It's awesome as burnt ends. Though I prefer to use country pork ribs for pork burnt ends.Aledo, Texas

You can certainly serve it as a main dish, though it's going to be very rich & fatty. Even when I plate it, I usually eat the belly with crackers & mustard to cut the fat a bit. A loaded baked potato with pork belly is always a hit.
