Pork Rind Crusted Pork Chops

SV at 130 for 1 1/2 hr with butter and rosemary. Into an ice bath to cool down so I wouldn’t overcook when frying the crust.  Then into an egg wash with Old Bay and into the Pork Rinds 

Frying on the mini in coconut oil.  


Resting a bit 


Ready to eat

  • I’ve got a thing of plain pork rinds I just hadn’t put anything on the docket to fry since I did that sous vide egg yolk. (I think my brain turned off that love in my life this month)

    I was really surprised at how well the pork rind held up to the heat though. Adding to the list. Looks awesome.

    That does look delicious.  Got to admit, being new to the Egghead forum, the hardest thing I find is learning the nomenclature used by many.  For example, SV?  I find myself having to do a google search on all the abbreviations before I can move on to read the rest of the comments.  Hopefully, I'll catch on.

    So @Mattman3969, what temp do you were at for the frying ?  Asking for a friend...

    I just checked my bottle of Old Bay and it has 0 carbs. So this was a GREAT keto recipe. We've used crushed pork rinds on chicken but not on pork chops.

    Salad is spinach,strawberries,mushrooms and Parmesan.  

    I could be wrong but I think Old Bay falls within the Keto category

    No idea on egg temp but the cast iron was about 425°
