Tacos del lingua
hit up rhe hispanic butcher and grabbed a tongue. SV 24 hrs at 170 with onion, jalapeño and lard. Then crisped up and stewed in the reserved juice. Served with black beans.
Homemade tortillas. Flour for the young, skinny people and keto from friendly almond/coconut flour for the fat old fûckers.
Had mine with hatch chilis, quick pickled red onions, cilantro and crema.
Had chicken breast in Reserve. Wasn’t touched. Both boys had three tacos a piece.

@Jupiter Jim thin slices packed into a mason jar. In a sauce pan, 1/2 cup water, 1/4 cup white vinegar, 1/4 cup Apple cider vinegar, 1 1/2 tablespoon honey or maple syrup, 1 1/2 tbsp salt, red pepper flake if you want. Bring all but onions to a simmer then pour over onions in the jar(in the sink to prevent a mess). Use a spoon or knife to press down onions and let out any air.
Let cool to room temp and they’re good to go. -
