Stuffed Poke Chops
Simple stuffing with fontina cheese and prosciutto. Braswell's cinnamon chipotle rub. Please try this. Thanks to @outrageous and @Jupiter Jim for turning me onto the rub. This was outstanding. Happy Friday night.

Thinking about a nice dry Grenache Rosé, but with grilled chops, anything will be good. On the red side, I like Pinot Noir, whites, chards, sauv blancs, dry riesling.
It is such a versatile cook, nothing is off the table.

Fontina and prosciutto. I am going to have to steal that one Brent. We have been stuffing chops with pickles and pepperoni recently, but I like your combination to mix things up. Looks fantastic.--------------------------------------------------
