Corned beef from scratch
I know that some of you make your own corned beef. I happened upon some corned beef cure and was wondering who had a recipe. Can’t seem to find one. I didn’t purchase nitrates, so this will be a couple week process I am guessing. Do you use pickling spices?

This is from they joy of cooking. I have used it with success. After it’s cured and you are ready to cook, rinse all the salt off you can. bring it to a boil the dump the water, start over with with fresh water for the cook, this helps get the salt off.

Just leave the rub off and skip the smoking part and you’ll have corned beef (or don’t because pastrami is awesome)

So I started the corned beef on July 5 and forgot about it. I didn’t use nitrates, think it is still edible?

I followed meatheads recipe for corned beef and pastrami, no regrets and didnt alter it in any way! I'm doing a second batch this week... Here is the link to the thread;
