SRF Black Grade Wagyu Brisket Cook

I picked up a 17.48 lb SRF Black Grade brisket on Father's Day weekend and got a chance to cook it today.


Got it trimmed and rubbed last night and onto the LBGE at 6:30 AM today with a little oak and cherry wood for smoke. It is sitting on top of the Woo ring and 10" cooking grid from my Mini Egg to help with fit.

Bark formed up enough for me to wrap in butcher paper after these pics:


Pulled it when the thickest parts of the flat were probe tender and FTC'd it for 3 hours before unwrapping and slicing




I normally don't sauce my brisket but I made a sandwich and added a little of Snow's BBQ sauce that I received in the Elfster exchange from @Navymom. Figured it was fitting seeing as how Snow's is really well known for their brisket (although I believe they cook choice briskets). It was quite tasty. I could get used to cooking wagyu (at $4.99/lb or less
).

That's a great looking brisket. I'm sure it was very tasty. I noticed "Kirkland" on the label. I didn't know Costco sold SRF products.
Any road will take you there if you don't know where you're going.

The Fathers Day sale was a trial. You might try calling stores in your area to see if they have them. Fort Worth was mentioned in CTS’s thread.
if you’re ok with not hand picking briskets and willing to buy a 50-60 lb case they should discount the price to $4.29/lb.
