I can’t stop cooking these. This site has completely changed my mind on home cooked steaks.
Loving my new Rutland as well, the egg is maintaining temperature way better than with the old felt gasket.

I am with John, reverse sear for the win on anything about 3/4 an inch thick, or thicker.--------------------------------------------------
