Burger and Fries
A couple of SRF Wagyu burgers, seasoned with black pepper and Italian black truffle salt. Cooked indirect at 300 and then seared on the Blackstone. Topped with Gruyere cheese, caramelized shallots, and some homemade roasted garlic and rosemary aioli.
Served with Parmesan crusted steak fries (indirect 400 until brown) and a decent Chilean Carmenere. Seemed fitting as it's origins are from Bordeaux but somehow traveled the world and ended up in Chile.
Terrible pics, but I was running behind and we all had to pick up kids from camp.

@SonVolt someone on here made them a few years ago and shared. They are easy. Slice as you see fit (usually a regular russet will make 12 fries for us).
Season as you like. I usually use cayenne, salt, pepper, Italian seasoning, oil, and shredded Parmesan. Indirect around 375-400 straight on the grate. About 40 minutes should get you there. They will blister and crisp up without needing to put them on the BS. That looks great! I usually caramelize yellow onions for burgers, but might have to try shallots next time. Like the aioli idea too!
Not to mention the fries! I'll have to try a batch on the egg and another in my air fryer. Directions for the air fryer say to soak the cut potatoes in water for 30 minutes, then dry them and proceed. Kind of a pain.
