Preparing a feast!

So I was volunteered to make a bunch of food for a teachers appreciation picnic at my kids school. I’m just getting things going, 40 pounds of butts, and smoked bacon/panko Mac and cheese. This is my first time using Rockwood and my Thermoworks Smoke. I’ve been a Fogo guy, so I’m curious. 
I'm in Fredericksburg, VA, and I have an XL and a medium.

    It’s for roughly 100 people so I wasn’t sure. Better to have too much than not enough. I think they’re doing hot dogs or something too, so hopefully I’ve got it covered. Thanks!

    FOGO is good lump, so you probably won't see a radical improvement.  Ultimately, the size of the pieces doesn't really matter much.

    2 great compliments...one woman says she’s from Memphis and is a bbq snob and she came back for 2nds saying mine is right up there. Another said I passed the “no sauce” test, which is a big one for me, because I don’t like a bunch of sauce on my pork, either. Had a bunch of people ask where my business is located too. I guess I need to get on that!

    Funny. I didn’t see anything spectacular about the Rockwood either. My tastebuds are hosed due to sinus issues so maybe that’s why. The lump looked just like a busted bag of RO to me. Not bashing it, but not praising it either.
