I chose SRF spare ribs as my cooks’ swag.  No brainer. Thanks to @SRF_Sean for the generous donations.  5.5 hours at 250 with apple and cherry.  Paired with Nichole’s bacon potato salad.  Easily the best spares either of us has ever had.  Not selling anything.  These ribs were special.  Cheers.

    Beautiful cook, and it looks out of this world. Spares are a fave of mine and those needed to be on my plate.
    Stuck on the road, ribs are just not even close to what you served up, by a long shot.

    I did the SV version last night. 147 for 20 hours then 300 for around 40 minutes. Amazingly rich and tender.

    Cooked some a few months ago. Smaller...but probably the best we've ever had
