Marinade
3tlbs anchiote paste
2 tips chili power
1tbls onion powder
1 tbls cumin
1tbls oregano
1tbls salt
1tbls pepper
1/4 cup white vinegar
1 cup pineapple juice. (I used orange this time the pineapple on an overnight marinade seam to pickle the meat a little bit).
Cut 5lbs pork but one inch think
marinade a least two hour I went about 15 hrs
1 pineapple cut 1 inch thick
one whole onion cut 1/2 inch thick
stack on trompo with onion intermixed. Cook at 350 until done indirect

I got one of those for Christmas this year (spike and cooking tray) but haven't used it yet.
So how was it? Was it cooked through? Did you end up slicing it all up together like a Latin Pastor?
