Morning All:
Tried a couple of new recipes for Easter...one was the muffin pan au gratin potatoes from Kristi at Necessary Indulgences...prepped to go on the Egg...
They went about 30 minutes at 400 indirect...did have a varying amount of heavy cream in each muffin (wasn't planned that way, but turned out okay)...
For the pork tenderloin lollipops, just cut a tenderloin into section, put on the stick & grill until done (per the recipe)...We did sprinkle some Dizzy Pig Pekin rub on them, ready to go...
the last three about to come off & the plate full...there was a dipping sauce of soy sauce, minced ginger, honey, sesame oil & lime juice...
Kathy also made a grape pie (done in the oven though)...
All was VERY tasty!

Yes I would do them again, but with some changes...the tenderloin my wife picked up was one with some sort of herb mixture on it...I would buy a plain tenderloin so I could brine it first to make sure it stayed moist as they were a little dry...also would put a little more honey in the dipping sauce as it was too soy tasting for me.
