Thanks for posting this. Homemade naan is the bomb.
Three quick things:- I am a fan of the Food Lab, and may give this a try
- That being said, the best naan I've had is here - http://eggheadforum.com/discussion/1205398/the-relentless-naan-thread-part-2-also-long-but-i-think-i-nailed-it
- Last, if you want to avoid the grid marks, @caliking discovered/developed the technique of using an inverted cast iron skillet over a felt level grid (usually on an MM, but would also work on an LBGE with an AR). You just press it on with a pad and off to the races.

I'm trying it tonight but just to make @Caliking sad. Also a Roccbox will help you avoid grid marks and it looks so much cooler than a cast iron pan.Keepin' It Weird in The ATX FBTX

If the Food Lab recipe is the same as the one from Serious Eats, then I found it to be too "yogurty". Disclaimer - I'm used to Indian naans, which is somewhat different from other iterations.
And you're holding out @JMCXL... let's see what the naans accompanied!#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
