I never get tired of your cooks. Happy New Year!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Great looking cook.  Where I come from, blackeyed peas are required for good luck.  The cornbread may help your cause, and with the rest of your cook, I expect you'll be happy anyway.

Absolutely correct on the BEPs.  They were in there I just forgot to list them.  They went in towards the end of the cook.  They almost melted away.   Almost made the dish 2 thick.

    Thanks for the compliment.

Worth it for the incidental benefits.  Glad you got 'em in there
