Baked Brie

raised indirect at 400
ingredients:
puff pastry
brie
pecans
brown sugar
Bourbon
egg for egg wash
I put down brown sugar, then pecans then more brown sugar and then drizzle bourbon over it till it’s wet but not so much to soak through.
The block of Brie then goes on top
Pull the the sides of the puff pastry over the top and use egg wash to seal up the folds.
Then flip it it over and put it on a small baking pan and cover it with egg wash
Then we pop it in the egg at 400 high in the dome and indirect.
Pull it off when it looks like this. About 20 minutes.
Need to let it rest for 30 minutes or the cheese will all ooze straight out.

Wow, that looks great! Not this year, but we've done brie several times for New Years but never turned out anything that looked that good. This one is getting saved. Thanks for sharing.Stillwater, MN

I have all the ingredients. I just need to invite some folks over...Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"
