Options
 Putting an entire rib roast into an Umai bag for a 60 day nap. The butts and ribs will be dropped off later today to a fiend who lost his wife to cancer last week. More photos to follow.

    Have you done the dry aging thing before? If not, you will be justly rewarded (although personally I prefer 40 day)

    There is Never a good time to lose a loved one.  Around the holidays makes it worse. Sorry for your friend.

    Beans getting some smoke on:



    Ribs are wrapped and in the oven to make room for the beans. Just wrapped the butts and put them back on the Egg for the finish line.

    Tough loss for your friend but your gesture will provide at least some distraction while enjoying your groceries.  Talk about getting it done and in the warmth of a CT winter.

    Sorry to say I didn’t get any finished pics, as I had to vacuum seal everything and shock-cool it. That way my friend could freeze or refrigerate as he saw fit, and reheat as necessary. He was incredibly grateful and I was glad to be able to help him out.
