OT: You’re All Wanna-Be’s

I was at an event last night and got cornered by a guy who started ranting that he was the “King of the BBQ” and asked what kind of grill I had. I said I have a few but I mostly cook on my Big Green Eggs. 

He laughed and said, “oh, you’re a wanna-be” (No I didn’t punch him)

He explained that his gasser doesn’t have hot spots, allows him to cook with wood, and he can...and i quote, “Even cook a brisket”

I couldn’t resist. I had him talk me through how make Everything from beer Butt chickens to hamburgers. 

Finally when I asked him what was the proper rolling technique for a hot dog his wife picked up that I was screwing with him and they left. 

Moral of the Story: if any of you were considering a green ceramic cooker for Christmas, save yourself the embarrassment and go get yourself a gas grill. They make brisket.

    You exercised great restraint while stringing him along.  But please share any great brisket insights you may have learned.  ;)
    BTW- I have always wondered about that hot-dog rolling thing on any grill.  ;)

  • Why don't the two of you have The Battle of the Briskets? You could do it on Foodnetwork and let the TV chefs judge.

    Good thing I didn't get rid of the gasser. Know anyone who might want to buy an XL, it smells like smoke and poorly cooked brisket.
  • Why don't the two of you have The Battle of the Briskets? You could do it on Foodnetwork and let the TV chefs judge.
    @Gulfcoastguy I’m pretty sure they outlawed gas grills at Memphis in May for the unfair advantage it gave participants.

    If I wanted a gas grill quality brisket I'd put it in the oven...

    Not to say gassers don't have their place (I have one and use it in addition to the Egg), I just get tired of people who think whatever they have is the best.

  • Funny, but I probably would have pressed him a bit on the "King of the BBQ" title. I tend to go along with the KCBS idea that barbecue involves cooking with natural wood or charcoal, mainly using smoke. Gas grills (and I've had many) are wonderful for grilling, but that's not the same thing as BBQ.

    @nolaegghead Love the quote.  It cracks me up  how a lot of people on this site bad mouth gas grills but Blackstones, which are gas grills, are totally acceptable. I will proudly say I have a Fire Magic  gas grill along with my five eggs. As I've said before just another tool in the toolbox. And not all gassers are propane.  Mine is  NG.

    Yeah, but they also put mercaptan in natural gas so it smells just as bad as propane. :)

    @Killit_and_Grillit I found myself in a similar discussion a few years ago. Friend’s holiday party, 3-4 neighbors own Traegers and we got to talking ‘cue.

    One fella had a few drinks in him and just couldn’t understand the whole messing with charcoal deal. Challenged me to a cook-off. Even let me pick the cooks. I chose brisket, steak, and Neapolitan-style pizza.

     One of the other guys told him to shut up before he hurt himself. Never got down to the actual cook-off.

    @td66snrf I totally agree. I explained to him that I had a gas, Blackstone, offset, sous vide set up, multiple Eggs, etc. But the arrogance of “I can beat you with my one machine” was beyond me. Especially given the exposure of what we see on this site. 

    I mean one day you think you have cooking figured out. Next thing you know @20stone is cooking a goat on a pike, @SciAggie is rocking a homemade paella station, @bgebrent is plating some new seafood concoction nobody can produce and and @nolaegghead...well he is consistently beings d!ck and we love that so. Carry on.

    Please share the proper rolling technique for Hot Dog's, it's bad enough that I'm Wanna-Be! certainly wouldn't want to screw up Hot Dogs. :)

    Went to a dinner party last night at the house of an Emmy winning sportscaster, who now is the COO of Louisville Slugger. They have been to our home frequently for egged meals.

    They refuse to cook anything on their gas grill to serve to anyone if I am at their home. I never have complained, or even mentioned in any manner, whether or not I like food grilled on a gasser.

    We had soup night. It was delicious. I got the recipe, but I am going to make it for them on the BGE.

    They are great cooks, I am not. However, using  komodo cooker, blows folks away when they first try it. They have had ribs, wings, brisket, butt, tenderloin, etc. All have been the best they ever had.

    Wait until they try their soup.
