Never.  Any fish is done on an alder plank.

  • Sometimes you just need a little to get things going.  But after you’ve been smoking your meat for awhile, it starts to loosen up and the natural oils kick in.

If you can’t oil it, don’t kill yourself over it.

Trust the oiling incentive to your partner-then if all else goes south, you have the personal option.  Of course oil is overrated if you get past the initial start-up.  ;)

I oil all my proteins.  Just like the insurance policy on fish when direct grilling.  It's not the same as in a pan on the stove.  (NB phrasing change to protein  ;))
