Beef Tenderloin and Bacon Wrapped Scallops. Cooked on the top rack of the adjustable rig with direct heat at 400 degrees. One of my favorite cooks!

Looks good. How do you keep from overcooking the scallops while getting the bacon crispy? At those temps, scallops are like shrimp and only take a couple of minutes to cook whereas the bacon much longer. In my experience, this typically produces a more rubbery-textured scallop.

These were the Costco frozen bacon wrapped scallops. Just put them on at 7 minutes per side. Perfection! Not a bit rubbery!

So, putting them on frozen slows the cooking process enough that it doesn't overcook the scallops... interesting.

There are three of us so I cut the Beef Tenderloin into thirds. I get three meals for $75. It is so tender and much less work than Beef Brisket.
