What’s this in my ribs?

I find these circular pieces of translucent yucks in my ribs. The ribs are tasty, tender and have the bite we like. Any idea what it is and should I be cooking longer?

I usually get my ribs from Walmart - Smithfield’s. Wrong source?Michael

All spare ribs are going to have those. You just have to eat around them. If you do a St Louis trim it should remove most of them.

It's cartilage. As stated above, eat around them or trim them off for a St Louis cut. They've been in any spare ribs (these days St. Louis cut is what my stores have) I've ever cooked. Sorta gross but a natural part of the animal.
