Minimax Neglect - And Loaded Potato Cakes

I cleaned and did some maintenance on all my Eggs this morning before work and realized I really haven't used this Minimax very much since I bought it. Very underutilized for week night cooks. 

So tonight the weather was great so I started a fire and fired it up to knock out a flank steak. 
Then I had some leftover baked potato guts so I mashed them up and tossed in some bacon, cheese, spices, eggs and flour and fried up some loaded potato cakes. 

Did not suck. Now I'm outside playing hopscotch with my daughter realizing I may need some more salads and chicken in my life.

    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    @GrateEggspectations Simply convenience. I have done them on the Egg. But my coals were getting low and my pregnant wife was getting irritable so it was also a matter of personal safety I guess.

    Lol.

    When I can, I like to do all components on the Egg, if only for the sake of lump efficiency. That being said, I too succumb to the convenience of the stove at times.

    @kl8ton yeah peas are dumb. I lost what I considered to be a solid arguement for green beans to a 3 year old.

    Looks awesome! Like @kl8ton said except the peas, but I've never been a fan of those. Like you I would have made a strong case for the green beans too! Anyhow jealous of the cook, those potato cakes  :o

    I can go with the chix, but unlike Popeye, I think salads are definitely worth a pass, across the board.  If you want the salad interior texture and the feel good deal, then focus on BLT's, submarine (great word right there) sandwiches and loaded burgers.  
    Any leafy green stuff should never be a stand-alone meal component. As close as I can get would be oysters rockefeller.  No dietician here but trying to keep everyone from focusing on the wrong parameters.  And it's only Tuesday.  ;)

    Very solid looking meal. It's funny, but we have been on an English pea kick around here lately. We get the small frozen ones. Quick and tasty. I'm sure it will pass, lol.

    @20stone my dad and I are already talking through how I'm gonna use my fire pit for some open cooking. He was pushing a grate. I'm wanting to do something different since I have 3 Eggs already. Like a massive rotisserie or something. 

    Probably wont get to that project until the spring but it's in the works. 

    That episode on Chefs Table got me thinking about it. I can't get it out of my head.
