Patio to table Hot Sauce brew for the upcoming Wing Ding contest......(Picture intensive)

....at my good friend @Jeremiah 's house next weekend. For those who may not have been on the forum last year, may have forgotten or just choose to be bitter and ignore, my victory (can't be humble with this bunch) was highly contested by my competitors who claimed I cheated by using a store-bought sauce. This year, I plan to whoop their @ss with a homemade hot sauce. 


Back in April, I purchased a few cayenne pepper plants and have been harvesting peppers all summer. This first picture may be a little blurred, but should be clear for @theyolksonyou & @Dyal_SC as they are probably drankin already on this fine Friday afternoon.



I have been freezing the peppers throughout the summer. Time was now to pull, thaw and remove the stems. I placed in a pot with vinegar, salt, fresh garlic, a small amount of onion and carrots. I started out by bringing the mix to a boil and then cutting back the heat a bit (while continuing to boil). The red color is vivid and quite beautiful from my perspective. 



I cooled slightly and transferred the mix, pureed until thickened a bit in my handy dandy blender.



Back to the pot to simmer over low heat for about 30 minutes or so.

Looking forward to the matching trophy for the year II victory.....oh and listening to this years excuses....

    @northGAcock - make sure all show up at the correct address.  I recall @Jeremiah was a real estate mogul recently...
    That sauce looks great-hope you have some peppers in reserve to adjust a few bottles to various heat levels down the road.  Best of luck with the up-coming Wing Ding.  No doubt an excuse for quite a gathering of miscreants having a great time and pausing long enough to pound some great tasting wings.

    Good thinking Frank. Jeremiah tells me he is down to one house now.....but you are right.....he may send me to his old one in order to improve his chances.

    Yeah....but there was a Chit load of stuff to clean up. Got my bottles ready....gonna do a bulk cook tomorrow for the wing ding sauce. I will provide those losers with a bottle of hot sauce this year.....

    At some point we need the winner of your cute little regional wing competition to come to Texas for one of our gatherings and take on our current reigning champion.   We might even let 2nd place finishers advance to the finals so @caliking could join in as well.

  • Sounds like you guys need to give out participation trophies to all the losers this year. You would have thought you cooked their food over RO lump or something. They should be Called the Sour Patch Kids cuz they bitter!
