I could have went to KFC.

Wife not home this evening and I started to just grab some fast food, but remembered these and decided it would go well with the red bean and cucumber salad I made earlier.
400 indirect to internal of 165 (next time 160). Sprinkled with a little olive oil, Lawry's seasoned salt and Weber Kickin' Chicken rub. Good stuff.

    That definitely was the right choice.  Chicken looks great.   How long have you been using the kickin chicken rub?   I've tried it but haven't truly decided if I like it or not.

    That definitely was the right choice.  Chicken looks great.   How long have you been using the kickin chicken rub?   I've tried it but haven't truly decided if I like it or not.   
    I have gone through a couple of bottles of it now. I like it just fine, but do have to be careful to not put on too much. Lightly dusted is how I would describe my use of it.

    I used to like KFC from time to time. Back when it was Kentucky Fried Chicken. Then the Colonel sold it and it started downhill. Last time I went was about 4-5 years ago... HORRIBLE!

    But now I have the original secret recipe! =)

    And I do buy their slaw for pork bbq if I'm too lazy to make my own. I have that recipe too. =)

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I kinda like original recipe ever now and then. Never tried hospital dumpster, but it sounds a little gross.

    Fried chicken is pretty hard to screw up, but in all honestly, I have had some of the worst at KFC.  And some of the best.  In general, I stick with the local mom n pop fried chicken joints.  I'm working on my recipe, but I don't have it dialed in yet.

    I just got a bayou fryer, what's your current recipient?  I need a starting point. 
    Sorry for the hijack, but the chicken looks delicious!  I have eaten a ton of egged chicken and I want to switch it up a bit

    Fantastic chicken @epcotisbest. Thanks for your memories of your grandmother. Brought back memories of my own. Back on the KFC note, we hadn't had KFC in over a decade and decided not too long ago to give it a try. It was a disgusting greasy mess that we tossed in the garbage.

    In my little pocket of North Atlanta KFC is "Korean Fried Chicken".....which is a whole different animal all together.  DELICIOUS.

    Yours looks pretty darn tasty as well.  It's these simple routine cooks that give me inspiration.  Thanks for sharing!

    I bought a chest freezer dedicated mostly to the fryer.  Mostly we do fish and chips.  Also eggrolls, calamari, chicken (work in progress), tortilla chips and one-off things like "gator balls".

    It's an awesome tool to have.  Easy to fire up an shut down.

    I have many fried chicken recipes and they're all good. That being said, Google Popeye's Spicy Extra Crispy Fried Chicken recipe if you like a recipe with some heat. I double the pepper spices for us. It's the current fav with the family. Regardless of which recipe I use, I always double bread the chicken and put it on a rack over a sheet pan to dry a little before frying. Then, after frying, I put it on another rack over a sheet pan so it doesn't get soggy so it can finish draining. Just slide it into a oven on the lowest setting after the pieces are cooked until all of them are finished. If you're are using a regular home deep fryer, you're going to need to cook them in batches. Hope that helps.

    Thank you for the kind words. As for the greasy stuff, yes I have gotten some like that as well. Pretty nasty.

    This is no joke. Years ago on our return from a Florida vacation we came thru Corbin, KY, birthplace of KFC. Naturally we had to have some chicken there. I bought a 10 piece "thrift box" as it was called at the time and traveled on up the road half an hour or so before checking in to a motel room. That was the WORST fried chicken we ever had from KFC. It was too far back to return it for a refund. That experience soured us on KFC for several years.
    Re-gasketing the USA one yard at a time!
