First Brisket Cook

12.5 lb Brisket I picked up at my local Giant here in Northern VA. I was a bit surprised they carried a packer brisket and when I noticed it was on sale for 2.99 a lb, I couldn't pass up the chance to try my first brisket. Smoked for 6-7 hours and wrapped in foil for a few more. Smoked at 250 over hickory.


This was not a Prime grade cut. In fact, I couldn't see any markings for either select or choice, so I'm not really sure. Some spots looked a little dry, but overall I was pretty happy with how things turned out for my first brisket cook!

Great result right there. Congrats on the outcome especially right out of the gate.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Thanks guys. I learned a few things and I have another one in the freezer that I will try again soon. The fatty side came out really nice, and I'm looking forward to some burnt ends tonight.

I agree! Looks better than my first brisket, I made the mistake of pulling my first one to early cause I was afraid I was over cooking it lol. If I remember right I pulled it at an IT of 185 deg instead of taking it up to 205+ deg, the taste was great but it was definitely a little in the tough side lol. Nature Boy, Springfield Giant off of Rolling RD. It's the one close to the Costco off Fullerton. It's near the Saratoga neighborhood. I was a bit stunned as I turned the corner to the meat counter cause you can spot the packer brisket a mile away. I've seen packers at some of the Asian grocery stores, like Fresh World off of Backlick RD. They have a huge selection of larger cuts that are in the cryovac packages. Nice looking cook there ! I actually found a full packer at Mall of Georgia Costo about a week ago, a rarity indeed !LBGE, and just enough knowledge and gadgets to be dangerous .

Chris (Nature Boy), I was back at the Giant in Springfield and ran into the meat manager. He said it was a one off that they received these packers. So it doesn't seem like it's a regular item for them. Price went up to 3.99 lb. There were two there this morning. I wouldn't make the trip up from Manassas knowing this is not a regularly stocked item.
