Dug a few out of the freezer. Found a Flannery Beef 10 oz dry aged rib cap medallion for her and a Flannery Beef 24 oz 60 day dry aged NY strip for me.
Have them on at 300 indirect. Will finish with a hot sear.

Wow- great looking steaks. I recall your endorsement of their beef quite a while ago.
BTW- you may want to sort out your high-end beef stock inventory process to achieve a higher turn-over rate.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
