    Our son is getting home from Europe today. His GF will be getting back from El Salvador. Chicken wings will be the first thing they will be asking for.

    Did a practice run last night. Head Country seasoning and Hot Island Lava Sauce the last 10 minutes on raised direct. Wings might be my favorite thing.

    Since I'm on the hot seat:
    Here's my favorite (heavier on the adult ketchup):

    Sriracha wing sauce  (~2 lbs of wings)

       •     For the Sauce:

       •     5 tablespoons unsalted butter

       •     1/3 cup honey, plus more for drizzling

       •     1/4 cup Sriracha (Asian chile sauce)

       •     1 tablespoon soy sauce

       •     2 teaspoons fresh lime juice

    And number 2 in the rotation:

    2 lbs chicken wings (separated and tips removed)

    2 tablespoons Dijon mustard

    2 teaspoons prepared yellow mustard

    3 tablespoons honey

    2 teaspoons cider vinegar

    salt and pepper

    2 tablespoons hot pepper sauce- or to taste.

    Otherwise-just go with the dry rub and enjoy.

    @ElkhornHusker and @Carolina Q - Besides the straight up flavor/taste I find the draw being the wide-range of rubs and sauces you can use to create different profiles.  I have around a dozen different recipes in my ready service locker for wings.  Some only get cycled once every year or so but all are a great eating eggsperience.  Just an opinion-

    The Wolf simmer function is so awesome. 

    Making some sauce using @lousubcap recipe as a guide.  I measure nothing.  I have nothing hot in the house either. 


    What temp do you take wings to?  Internal temp.

    I have never measured wing temp-figure around 45-60 minutes and trust the eye-ball.  If you have a thermapen ( I do) then I would check something where the wing meat surrounds the thermo and look for 180*F+ but there is no personal history behind that recommendation.

    Nola, I have always had great luck with those Sanderson Farm wings. At our Piggly Wiggly you can buy them in 10 pound bags. 

    Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

    Tried the pork rind method out. 

    3lbs of wings, thawed and refrigerated to dry out. Dusted with an all purpose rub and meat church. Then coated in the grinded pork rinds. 350 dome for 30 mins a side, indirect. Tossed in Buffalo sauce, with homemade blue cheese/celery-carrots. They were awesome
