Chuck Roast

Doing a chuck roast today. Bought a couple of 3 pound roasts from Costco.
Prepped both with a paste made from horseradish sauce, mustard, tomato paste, and Italian Seasoning from Penzy's.
Made to the consistency of a creamy peanut butter, and spread on all surfaces covering it all. After spreading I applied a liberal dose of Cow Dust made available by @DoubleEgger.

If you don't want to cook to pullable temps, but want to pull anyway, just throw a big chunk or two into your stand mixer...
