First Crack at Plate Ribs

Egg is coming up to temp. Will be putting these on shortly. I asked for plate ribs, I'm pretty sure I got plate ribs but the sticker says short ribs. Oh well.

Dome temp was at 250 when I put them on. Going to try and let it creep up to 275. Couple chunks of Post oak and Bourbon barrel.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Both the plate and the chuck ribs can be called "short" because they come from the "short plate." For those who may want to look for them, here's a good reference:

The chuck ribs tend to be much rounder, 'tho sometimes not so mach as in the reference. As lousubcap said, look for 3 or 4 bones to tell them apart. That works if the shop hasn't cut them up into packages of single partial bone sections, which is what most of the markets around me do.
Oh, and at Christmas, I cooked plate ribs, and my daughter's huskies went nuts on the bones. Actually ate 80%, and were hiding the bits from each other.
