Blueberry Chipotle Stout BBQ Bababababy Back Ribs...

A Father's Day tradition around my house....ribs on the medium and a 3 cheese mac & cheese on the MiniMax.

Spent the day with a buddy smokin ribs and doing a few chores around the house. 

I hope each of you fathers had as great a day as I did.

    @JohnInCarolina & @Killit_and_Grillit  The sauce is a duel process and then combine ingredients........ really quite easy to make. 

    Ingredients
    1 tbsp canola oil
    1 Vidalia Onion - diced
    1 small shallot - diced
    3,4 or 5 cloves of garlic (I usually go 5 myself) - minced
    24 oz of your favorite stout beer
    1 carton of fresh blueberries (make sure to remove any stems)
    1/4 cup of packed brown sugar
    1/2 cup of apple cider vinegar
    1 tsp pureed chipote in adobe sauce (if the wife isn't eating...I go more)
    1 tbsp molasses
    1/3 cup of Heinz ketchup
    1 tbsp of Dijon mustard
    1/4 cup Worcestershire sauce
    1 1/2 tsp kosher salt

    Heat up canola oil in a medium sized pot over medium heat. Add the onion and shallots. Sweat the onions for about 10 minutes, stirring occasionally, until translucent. Add the garlic and stir / cook for another minute. Add your favorite stout beer to the pot and raise the heat to medium high. Allow the stout to simmer and reduce by half...about 15-25 min.

    While the stout is reducing, place the blueberries, brown sugar and cider vinegar into a small sauce pan. Place over medium heat. Stir until the sugar is dissolved. Cook over medium heat until the blueberries begin to burst. Remove from heat and set aside.

    Add the blueberry mixture and the rest of the ingredients for the bbq sauce to the reduced stout. Wisk and reduce heat to medium and simmer for roughly another 10 minutes. 

    Allow the sauce to cool slightly and then transfer to a blender. Blend until very smooth.

    Strain the bbq sauce thru a fine mesh strainer. Ready to baste your ribs....I do about 30 min before pulling off the egg.

    I can usually read through a recipe and get an idea of what it may taste like...

    i ran with ribs, too. My recipe was really complex. Hint: the secret ingredient is dizzy dust :)

    I wonder how much a carton is? I'll see if the grocery store has one so that I can compare it to how many I picked. That might be acidic enough to can ... or not.

    The recipe calls for 8 ounces of Blueberries....I believe a carton is around 12 ounces. I use the 12 my self and find much joy.
