Bone marrow glazed ribeye, sauteed potatoes, red pepper and chorizo (pics)

We celebrated our wedding anniversary with reverse seared rib-eye steak. I used a bone marrow glaze during the searing process, a perfect match to Dizzy Pig Cow Lick rub. Add in sauteed potatoes with red pepper and chorizo and a side of fresh asparagus, a remarkable meal. We had it with a 2001 Staglin Family Cabernet Sauvignon.

    So much flavory goodness in bone marrow, it's like the original butter...kind of a lost art.

    Where does one get bone marrow?   Ive actually thought about dipping a finished filet migon in melted duck fat bath for added flavor but the bone marrow option looks intriguing.   I have not seen it anywhere but then, ive not been looking for ot either....

    @westernbbq I get the bones from a butcher here in the UK. They process the animals in house, and have spare bones which they are happy to cut up and give me.

    @MrWigan if you have a local independent butcher, you're probably sorted. Waitrose sell bones with marrow inside for £1 I think.

    @Killit_and_Grillit I agree, it's mostly forgotten. Possibly because meat comes mostly from supermarkets that get the meat pre-butchered. And yes ... "flavoury goodness"

    @Biggreenpharmacist they are roasted in duck fat and then sauteed with a little olive oil. Details in this post:

    Would it work better if I sauteed them in melted marrow? Interesting ... will try that but it will have to be after we get back from the USA, so in about a month. In the meantime feel free to give it a try yourself. :)

    Wonder if Waitrose are still doing free delivery on orders over £50.

    Seriously though I would be amazed if Wigan didn't have a butcher's that did this. There are at least two in Chorley that process animals.
