    @SciAggie Gary, if you only knew how happy this makes me. I don’t care what you want to call it. They do look and count as naans to me though, FWIW. 

    This is ol’ skool stuff. Excuse me, I have to look at the pics again. And again.

    Thanks y’all. Since the oven was already hot, we just made flatbread pizzas.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    First, build a WFO. 2nd, find an Indian guy who is obsessed with pre-colonial naan making And willing to share his secrets.  Third, cook it perfectly. Super easy. 
    Well... yeah, I see your point - I blame it on this forum. This place encourages that kind of behavior. 

    Coming from a guy that makes clandestine meetings in remote parking lots to buy meat from the trunk of a car... :)

    OK cali, i've solved the problem.  they make a laser printer that makes naan.  or roti, whatever that is.

    Haha! I've seen ads for those before. Then I saw the price tag. And went back to Kroger for their fresh wheat tortillas.

    But funny that you posted this , since I've recently been on a homemade roti kick.

    I posted in the Wild Yeast thread, since I've been making a SD version (khamiri roti). 

    A work in progress though. Its been about 20yrs since I made these on the regular, and I'm rusty on the details of my aunt's process (she was the one who had these down). Also, pedestrian fare, so not sure if many would be interested :)

    I'll post an update when I have it all wrapped up.

    Not sure it will.  The steel seems to not work as well for this purpose at temps above 500F or so.

  • Oh. My. God. Finally got it right. I hope these images cost you $500 for a Roccbox but either way, thanks for doing the work on this. 





    Chicken Tikka Masala and Saag Paneer were the Perfect topping for this Naan. This is by far the best Naan we have ever made. Years of hit-and-miss (mostly miss). We really dialed in the Naan rig too. It all came together tonight. So happy.

    Always comes out beautifully, I've been using this recipe for 15 years. Easy to modify also, add fresh whole corn, add jalapeños, whatever you'd like.
