sous vide ribs finished today - eat tomorrow

Just took a rack of spares out from an 18 hour swim at 147º aka JIC method. Due to 4+" of rain last night and continuing today coupled with water in my basement I have a change in plans. Thawing frozen CC chili for tonight's supper and will reheat and smoke those ribs tomorrow night hopefully in dry weather and in a better frame of mind! If it works like I've read this may be a new plan ahead meal - time wise - sous vide when time is convenient, but enjoy when time is even more convenient!

We have a ravine 70 feet below and behind our home which is normally dry. The IL River which is 1.5 mile from us is reaching flood stage and the "river rats" who enjoy river living are abandoning their homes already.
