Stuffed Pork Loin & Cheesy Potatoes
Some of the college kids came up to spend the end of their spring break with us. I butterflied the loin and stuffed it with sautéed apple, onions and bacon seasoned with MC bacon BBQ rub. Dry rubbed and smoked with apple wood. Sauced it the last 15 minutes. My much better half made the cheesy potatoes. Made for great meal last night. Cheers.

Great minds think alike. Yours looks much better than mine right now! We have had this in the freezor for a while so I decided to stuff it with what I had. Spinich, apple sauce, and cheese. We will see how they trun out.

Do you just slice the top of the loin like you would a loaf of French bread? Or is it some kind of spiral cut so that the loin will lay flat when you finish cutting?
