Upside-down ribs
I recently had ribs at a small joint down here in Texas, and they were superb. I spoke with the chef and he told me he cooked his ribs meat-side down.
Anyone familiar with this method?

He used a big commercial pit. I'm wondering if he cooked them that way over an open fire--i.e., without a plate warmer or other intervening device.

I use to do meat down in the oven when wrapped in foil but never tried on the egg. Look forward to more responses

I think you should put two in a rack as well. Have the bone sides face each other. 4 racks. Now that is homework worth doing.
Also, must be graded after swilling bourbon for the entire cook.
