Brisket on a Stick and 3 Cheese, Garlic Scalloped Taters
Beef ribs from my bils' angus cow. Rubbed with Sam's BBQ1 brisket rub (thanks for the tip @DoubleEgger!). Went 2 hours at 250 with white oak. Then 2 hours in a covered tin pan steaming in beer. Last hour naked at 250. These were spectacular. Best beef ribs I've managed. It was a modification of one of Kristi's (@NecessaryIndulgences) recipes. My much better half made the cheesy scalloped gold potatoes and southern style green beans. Stuffed! Thanks for lookin'.

Those look really nice. I think I may cook my next ribs in some liquid for a couple of hours like this. I love beef ribs but my last couple of efforts have not been as tender as I like.Coleman, Texas

@bgebrent I was a creative kid, work from home, use outdoor cooking as therapy, and still am behind the curve after seeing your posts. How you have the time I will never know.
You should start a weekend outdoor cooking school. See if you can get the VA to validate it. I could put you in early retirement. Hell we could probably get a TV show!!
