Brisket on a Stick and 3 Cheese, Garlic Scalloped Taters

Beef ribs from my bils' angus cow.  Rubbed with Sam's BBQ1 brisket rub (thanks for the tip @DoubleEgger!).  Went 2 hours at 250 with white oak. Then 2 hours in a covered tin pan steaming in beer.  Last hour naked at 250.  These were spectacular.  Best beef ribs I've managed.  It was a modification of one of Kristi's (@NecessaryIndulgences) recipes.  My much better half made the cheesy scalloped gold potatoes and southern style green beans.  Stuffed!  Thanks for lookin'.
