@westernbbq Thanks for the idea, I did it, the burner assembly from my retired stove works well. The burner is too large for rear insertion, that's a bonus because there's no risk of it falling out even unattached. Should be easy to fabricate a strap to secure it with the screw on the burner and the two prefabricated nuts next to the opening.
Nice to have this option, will be useful for occasional clean burns too. It gets real hot even on low setting. I ripped a 4.5" wide firebrick down to two strips 2.5" + 2", to be experimented as fire shield.

Fired it up tonight. Works great but needs tweaking, the thick trimmed firebrick does too good a job of blocking heat to the base steel plate. Plan to make a shield out of ss plate. Unlike pellets it's nice to be able to turn the heat up or down as needed. Pizza lacks the wood fire taste though. It's a nice option for cooking in bad/cold weather.
Also still tweaking the dough at different hydration level, fermentation process, yeast quantity, etc. Never gotten serious with making pizza dough until now!
Made four pies, the one with home made bacon + fresh pineapple + smoked mozz is our favourite. Potato and home made pesto was good too.
plenty of heat even at medium low setting
