Anyway, I bought the collagen to give it a shot with some dried fermented sausage. I always see dried sausages in collagen so I bought some.

We used collagen for the brisket missiles we did the other day, which are pretty big diameter (~55 mm). The texture seems like something that is intended to be peeled before eating, but they worked great.nolaegghead said:

There are edible and non-edible collagen casings. Usually the larger collagen casings are the inedibles.

Technically they're all edible but the big, thick collagen casings, like for summer sausage, are usually removed before eating. There are also plastic casings that are clearly not edible.
