Some fun cooks while on vacation

My wife & I took some down time together and stayed at home and for the most part relaxed. Did some shopping etc but, it was a nice R&R.
Here's some cooks we did in no particular order. 
Smoking a Chuck w/ Oak & Black Cherry. Careful...save the juices for later. 

Mixing Masa for Tamales.

1st Batch going on for a steam bath in the Lodge DO on the MM. 

Lid on for obvious reasons :wink:

Finished and plated with NM Chile and fresh made pintos. 

The pintos look much darker in these shots but, it's me getting used to using my new phone/Toy. LG V20 Titan. Retired the HTC M8. 

Then we decided to really bring back my Wife's childhood memories. Biscochitos.

Yes the above were all in a day's work. Less the Chuck...that was done a day or two ahead. 

Next morning... huevos rancheros.


Moving on. 
I had ordered a couple of the Lodge Great Smoky Mountains 2016 skillets when Dolly Parton was raising funds to help with all the victims of the recent fires.  Once I received them i decided to use one and the other is going to @HuddleHouseCook to use or save as he sees fit. 
Breaking in the new skillet with some fresh yeast rolls. 



Pommes Anna... Recipe by Chef Anne Burrell brought to life in the egg. This one was a little tricky but, i would definitely do it again. 

Pear Butter w/ orange zest. Made with the last of our holiday Harry & David Royal Riviera Pears. 

Plated with Boneless Ribeyes w/ Holy Cow, yeast rolls with the above pear butter, Pommes Anna & steamed broccoli. 


We enjoyed our time together as always. Thanks for looking eggheads. Cheers.

    Looks good. However you may want to cut back a little on the heavy cream next time. It's blanched out your food just a bit.

    As long as the Raiders have no chance in an AFC Championship. I expect Brock and the Texans will kill their chances in moving forward. D.     Ya I saw that my OP only showed a title. ...not amused...I had to redo the entire post. It didn't even save it under "drafts" as i did go to request desktop site since I'm on mobile and that's the only way to view old drafts. But, nothing was there.  First world problems.

    @nolaegghead Thanks man!  Naw she was super pissed at a group of thug squirrels and was hauling ass. I just wanted to try a manual shot to see if the F stop on the camera was as good as the reviews said. Thus far I'm pretty happy with this phone but I have a lot to learn on the camera. I was just pretty stoked that she wasn't a  blur because that's what I would have got with my old phone.

    Still dealing with Jet Lag, but man, I wish I would have been able to take my egg.

    @buzd504 Correct it's a Camellia. This one, by all guesstimates, is about 12-15' tall.

    Fantastic.  The next time you decide to have a staycation, I think a bunch of us need to come visit for our vacation.  We'll sit around your back yard drinking beer all the time while you cook for us.  It will be great.

    Wow Blake.  The Huevos Rancheros looks fantastic.  Everything does.  But it is breakfast time and I want some of that.  The rolls look great as well.  Bread is my only weakness.
