    As much as sous vide  intrigues me is it really worth the hassle? Here's a reverse sear I did for a friend's Christmas party. Took each roast off at different temps so they could have medium rare medium and well done ( the only left overs were from the well done roast!!)

    Well Done?  I stopped cooking steak for my friends that want the steak well done.  I will do medium well, but that's as far as I will go especially with Prime Rib.  I guess you could make stew out of the well done one.
