    I was wondering that same thing. I'm thinking those are for pre-orders of the chilled brisket that you can pick up. They mentioned cooking about 100 briskets but then said only 49 were for people waiting in line. 
    According to Benji, his general manager (chubby bearded guy in the video), they take the briskets off around 2 AM and put them in a warming cabinet to cool down slowly. They are still above 140 degrees when they are served between 11 AM and 3 PM. They put them on each day at 10 AM.

    With cooking on the egg you shouldn't need to, but those large homemade smokers I can see why they do.

    This was an awesome video and I want to go there for some great BBQ.  This is on the bucket list now.

    I noticed that each of the ribs have a single stripe of mustard on them. Then hand spread before the SPOG goes on. Also noticed how loose they are. Most of my spares aren't that loose going on the Egg.
    Anyway I'm glad you guys enjoyed it.

    If you want a brisket from there but don't want to stand in line, you can order online in advance, but I think it's only for certain days.

    I watched this yesterday....was thinking about it overnight (ok maybe dreaming)....and thought I would just drop back by and say thanks again for posting...I really enjoyed watching that.

    I understand that he pulls them then and holds them in coolers until service.  Also, something that struck me when I read his book is that the smokers are going non-stop six days solid, with rotations of briskets, ribs and butts.

  • I enjoy Franklin's, but Louis Mueller in 30 miles up the road with less line, equally great brisket, and the best beef ribs I've ever tasted.
