A Pork Collar and lowcountry hash in the NC Mountains...

Leaves are at peak....but foggy at my elevation. No adverse impact to the egging. Sorry about the plated picture.....is of my secound helping. Had some fresh corn and Boston baked beans to round things out. Hanging at my brothers mountain house.

    No more than 175 on a L&S......but can really pull anytime after 145. Either way, you can also finish off slices with a little pan fry (little butter an olive oil) to add a nice little crust. You will enjoy the SRF collar. Comes from a much larger pig....healthy cut. You will really enjoy.

    Tell us! I was just in Banner Elk and Asheville. Colors were gorgeous.
    I got out on the parkway this morning and headed north. Ran into some patches of sunlight in and around Grandfather Mountain. Largely where I am staying was overcast and in fog most of the day. There is a hike (will do tomorrow) that heads up the mountain (brothers house) to an overlook called Sitting Bear. A great view of the entire Linville Gorage. Hoping for better views tomorrow....cause the leaves are perfect.

    My brother has a summer house at good elevation....with a great view. Wish I could post some pictures.....maybe tomorrow. A beautiful part of the mountains for sure.

    Absolutely will hold up. This cut comes from the shoulder....the money muscle they call it. You don't want to take it to 205 as you would a butt /shoulder.

    Who is "they"?  The USDA safe temp recommendation is 145ºF (with a 3 minute hold). I am curious who is making the 140º is safe statement.  From a culinary standpoint, 140º may be preferred and recommended. We are all free to follow the USDA recommendations or not. If not, we need to understand that we are taking an elevated risk.

    You can, of course, use the temp/holding time charts if you prefer a lower temperature.  But you need to state both the temp and time, not just the temp when doing so.

    @NCSmoky he is at about 3900 feet. You will have a large time.

    I've backpacked lots through rhododendron gap and little Wilson, massie gap, mt Rogers, etc. beautiful there. One of the best backpacks too, because you can easily loop back to the parking lot without having to double back, and it's easy to shorten or extend your trip depending how your progress is going. I need to get back there....
