Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

That's a very inviting brisket.

Looks great. Got me wondering how your Mom did her brisket. I assume it wasn't on the Egg. Did you adapt it as an Egg cook?

@Griffin, i did make it on the egg in pan v oven. Instead of 350 for 4 hours, did it at 275 for 6 hours in pan so the juice was part of the sauce. It was great. ThxBGE Large and MiniMax, Napolean 500. Obsessed with rotisserie.

Excellent looking spread, well done! Have a flat coming out of the sous vide tomorrow at noon, will finish on the egg. The duck fat spuds will make a great side, thanks for the inspiration.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
