Beef back ribs, Wings, Nachos

Didn't really plan much on this one. Yesterday afternoon I pulled some beef back ribs out of the freezer and put them in the fridge. This morning I was going to put them on the small, but after opening them up and seeing how scarce the meat was, decided to use the XL and add more to supplement. Stopped by Wally World and picked up some wings.

Wetted the ribs with Worcestershire sauce and then rubbed with BBQ Cow Dust (thanks @bgebrent). Got the XL setup indirect around 250*. Let the temp climb to around 275* and after about 3 hours added the wings. Finished up my Mad Hunky Hot Whang rub on the wings.


Things were getting close to finish and my wife mentions that nachos would be good. Last minute addition to the menu, really basic. Just chips and cheese and jalapenos on only my portion. I live with wimps...

    Great cook and audible.  Sunday bar food-can't beat it especially when you crank it out.  Most eggcellent.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    So, I first glanced at that as I was sitting at a hotel bar last night in Philadelphia eating dinner alone because a colleague's flight had been delayed.

    Awesome spread, never thought of nachos on the egg, how are they vs baked? Do they pick up much smoke?

    They do pick up a hint of smoke. Other than that, about the same.

    You've made that generous offer before and it is appreciated. That's why it hit me especially hard.  Unfortunately, I had to wait for a colleague to arrive as we had some prep work to do before a meeting the next day.
