Just slice potatoes and onions on the thickest mandolin setting (about 1/4"). Arrange 4 slices of spud and one slice of onion around the pan. Throw some garlic and shallots in the bledtec with some pepper. Sauté that in butter and olive oil and pour over the potatoes. Egg indirect at high 300's until they start to brown, sprinkle with grated parmesan and asiago and cook till cheese browns

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Thanks guys, been doing them for years. Don't remember where I got the idea. best results I have had are putting a stainless mixing bowl in the middle of the ring. They crisp up better than filling with more potatoes. Oh and before I put the cheese on I drain the fat from the pan. Wouldn't want potatoes that are baked sin butter and oil.
