Yesterday I asked for some advice on how to do these ...
Thanks to everyone that chimed in. I trimmed some of the hard day off and seasoned with worcestire sauce and salt, pepper and garlic. Ran em naked til they proved like butter and ....

Congrats-too bad I had a friggin conflict today... Great looking cook-time to go again.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Thanks guys! Egg settled in around 290... These took 5 1/2 hours. Finished a little quicker than I planned but we just moved dinner time!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
