OT- PC pot roast

quickly becoming one of my favorites.

Got a 3.5lb chuck roast - choice, however it looks like pretty good quality, especially compared to the other choice they had.

Seasoned with kosher salt and a coffee rub. 

Seared each side for 5 min

Add broth and PC for 80 minutes.

Quick release to add onion, carrots, tomatoes, green beans.

PC for another 10 min

So tasteful with only a little seasoning. All of the flavors just mesh together and it really is great.

Paired with homemade cauliflower breadsticks.

All in all about 10 carbs per person depending how many carrots one eats.

    Looks like a winner to me ole buddy. Enjoying that Instapot? Since gettin an electric, my old standby stays on standby most of the time.

    Oh ya. I enjoy it. I still use my egg mostly. But this gets some use for sure.  Any good ideas to try out? @SGH

    Pot roast is a favorite of mine. I got a lot of faves, but pot roast is comfort food. Yours looks spectacular, and the presentation was excellent.
