Spatch Chicken on the Mini

I've had the mini for about 1yr now but never cooked a spatch chicken until tonight.  

 Spatched a 3 1/2lb bird and rubbed with DP Bombay Currish. Cooked at 400 at felt level with a 1/2 bowl of lump because even with the woo raised isn't really raised.  


Plated with some Sante Fe Quinoa

    Raised on the mini or the mini max is like "reclined" on an airplane...not much. Great cook as always.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Looks like a winner to me ole buddy. I have got to ask brother 3969, do you have these stones for your mini? If you do not, go ahead and spend the money and get them.

    Beautiful cook Matt. Got a question for you; I really like your counter top. My beautiful Wife selected something similar, I think.  Is that Persa granite?

    Yes sir I do and use them a bunch. Lil different cooking indirect on the mini because the protein 
    is so close to the radiant heat of the stone.

    @YukonRon - the name of my granite is Lapidus.  Very similar to Persa in color.  
    Beautiful rock my man. Ours is still on the boat coming over from Europe. Have not seen our cut yet. Supposed to be here next week. Templates are done.

    Love your mini posts. Did this a while back and surprised my guests that a whole bird could fit on the mini...and taste good! Nice job!

    Agree. It's for this reason that I limit the temp of my indirect cooks on the mini to 275 if time permits. I have ran considerably higher than this, but the texture of the meat adjacent to the stone is usually tighter than I prefer. Again, great job buddy.
